The real deal: Chocolate mousse

One chocolate mousse has already been posted here. But here is the real deal - no vegan version, no healthy version - just an a m a z i n g chocolate mousse! Yes, yes, yes and three more times yes!

I used to make a completely different version of a classic chocolate mousse, but then I found this recipe on one Danish food blog (which very quickly became one of my favorites) and since then I never returned to the old recipe. I did make some small changes in the recipe, but I still think you need to check out where I got this #chocolateheaven recipe from: Valdemarsro .

What you will need for 4 portions:
150gr dark chocolate (I recommend 70%)
4 egg yolks
3 dl of whipped cream
2 table spoons of brown sugar

Start of with chopping the chocolate into small pieces and let it melt in a water bath. You need to do this first, so it won't be entirely hot when you pour it into the creamy fluffy mass. So when the chocolate has melted you can started with the other stuff.

Whisk the yolks and sugar until it has a nice airy consistency, almost with a whitish color. In another bowl you have to whisk your cream until its thick and then add it little by little to the yolk mass. Afterwards start adding the slightly cooled chocolate - but really a little after little so you don't ruin the amazing airy consistency and so your mousse will turn out just amazing. Let it cool for a few hours and its ready to serve!
