Are you tired of having a classic roast duck? Then give it an Asian twist and you got this great dish!
Duck:
1x 2kg duck
2teaspoons of salt
3teaspoons of sugar
Pinch of five Chinese spices
Carrots
Cucumbers
Spring onions
Coriander
Asian plum sauce:
3 cloves of garlic
3 teaspoons of plum jam
2 teaspoons of soy sauce
sesame oil
sugar
water

- Preheat the oven to 150C and wash the duck - clean it if needed. In a cup mix the salt, sugar and five spices. Drizzle it over the duck and put it into the oven. Now its time for doing whatever you need to do - because the duck needs to be there for approx. 2.5hours.
- In the meanwhile you can make your pancakes, cut the vegetables and coriander.
- When the duck is done and nicely brown - take it out of the oven because it needs to cool before you start pulling the meat apart.
- For the sauce: heat a deeper pan and add a splash of sesame oil. Crush the garlic and put it in the pan, stir it and add the jam + soy sauce. Add a little water so it becomes liquid and that you can nicely mix all the ingredients together. Let it simmer until the consistency gets thicker. If needed sweeten with sugar or add a splash from the duck juice.
- Pull the duck meat apart and don't throw the skin out! That crispiness is amazing!
Serve with mandarin pancakes, vegetables listed on top, plum sauce and drizzle a nice bunch of coriander over it!
